Ingredients

 Scallops1 pound, frozen
 Celery1/2 Cup (16 tbs), finely chopped
 Onion1/4 Cup (16 tbs), chopped
 Garlic - 1 small clove, minced
 Butter/Margarine3 Tablespoon
 Fine saltine cracker crumbs - 1/4 cup
 Parsley1 Tablespoon, snipped
 All-purpose flour - 1 tablespoon
 Paprika1/4 Teaspoon
 Milk1/2 Cup (16 tbs)
 Dry sherry2 Tablespoon
 Process Swiss cheese - 1/4 cup, shredded

Directions

GETTING READY
1. Preheat oven to 425° Fahrenheit.

MAKING
2. In a large pot of boiling water, cook scallops for 1 minute.
3. Cut larger scallops into half.
4. In a skillet, heat 2 tablespoons of butter and sauté celery, onion, and garlic until tender; do not brown.
5. Stir in scallops, crumbs, and parsley.
6. In a saucepan, melt butter and stir in flour, paprika, and 1/8 teaspoon salt.
7. Pour all milk at once; stir and cook until sauce is bubbly and thickens.
8. Remove pan from heat and stir in sherry.
9. Into an 8 inch pie plate, spoon scallop mixture and pour sauce all over.
10. Sprinkle cheese on top.
11. Bake in preheated oven for 15 minutes.

SERVING
12. Serve Scallops Elegant with a green salad.
