1 (20-ounce) can crushed pineapple undrained
6 slices white bread
1/4 cup plus 1 tablespoon butter or margarine
3 eggs, beaten
3/4 cup sugar
1/2 teaspoon ground cinnamon
Directions
Drain pineapple, reserving 1/3 cup juice; set aside.
Trim crusts from bread, and cut bread into 1-inch cubes; reserve crusts for other uses.
Cut butter into 1/2-inch pieces.
Combine reserved juice, pineapple, bread cubes, butter, and remaining ingredients in a mixing bowl, stirring well.
Pour mixture into a lightly greased 2-quart casserole; cover and microwave on HIGH 8 to 10 minutes or until set, stirring at 3-minute intervals.
