Scalloped Tomatoes Recipe
Scalloped tomatoes is a great side for any meal. Easy to prepare, this scalloped tomatoes recipe is made with added green onions and herbed to taste. Baked with a breadcrumbs topping, it comes out lovely and golden on the top.
Ingredients
1/3 cup fine dry bread crumbs
1/2 teaspoon sugar
1/4 teaspoon each dried basil and thyme, crumbled
1/8 teaspoon black pepper
4 medium size ripe tomatoes , cored and sliced
2 green onions, chopped fine
1/2 tablespoon unsalted margarine
Directions
Preheat the oven to 350°F.
In a small bowl, mix together the bread crumbs, sugar, basil, thyme, and pepper.
In a 9 inch nonstick pie pan, arrange a layer of tomatoes, sprinkle with 1/3 of the bread crumb mixture, and top with ¥2 of the green onions.
Continue to layer the tomatoes in the same fashion, ending with a layer of bread crumbs.
Melt the margarine in a small saucepan or skillet and drizzle over the tomatoes; bake, uncovered, for 30 to 35 minutes or until the tomatoes are soft.
Increase the temperature to broil.
Transfer the pie pan to the broiler, about 5 inches from the heat, and broil for 1 to 2 minutes or until the bread crumbs are golden brown.
