Scalloped Potatoes Recipe

Over the years I perfected the art of making this Scalloped Potatoes which was taught to me by my elders. The Scalloped Potatoes is made with Vegetable which can be easily found at any grocery store. I prefer to make Scalloped Potatoes as a Side Dish for all my family get-togethers. You do not need to be a gourmet to make out how appetizing and tasty this dish really is.

Ingredients

 
4 medium-sized potatoes, peeled and thinly sliced
 
1 green pepper, shredded
 
1 carrot, shredded
 
1 medium-sized onion, chopped
 
2 tablespoons butter or margarine
 
2 tablespoons flour
 
2 cups milk
 
Chopped parsley
 
Salt and pepper to taste
 
1/3 cup shredded American or mild Cheddar cheese

Directions

In a well-greased 1 1/2 quart casserole, arrange layers of potato slices, sprinkling each layer with green pepper, carrot, and onion.
In a saucepan, melt butter and blend in flour; add milk and cook, stirring constantly, until mixture is thickened and smooth.
Add parsley; season with salt and pepper; pour over potatoes.
Sprinkle with cheese.
Bake, covered, in a 350° oven about 45 minutes; uncover and bake 45 minutes longer, or until potatoes are tender and cheese is delicately browned.
