Scallop Kabobs Recipe

This recipe of Scallop Kabobs was picked up by me from a gourmet magazine, I twisted it a little bit to meet my taste here I am, sharing my version with you. Have faith in me and try this Scallop Kabobs.

Ingredients

 
1/4 cup REALEMON® Lemon Juice from Concentrate
 
2 tablespoons vegetable oil
 
1 teaspoon oregano leaves
 
1/2 teaspoon basil leaves
 
1 clove garlic, finely chopped
 
1/8 teaspoon salt
 
1 pound sea scallops
 
8 ounces fresh mushrooms
 
2 small zucchini, cut into chunks
 
2 small onions, cut into wedges
 
1/2 red, yellow or green bell pepper, cut into bite size pieces
 
Additional REALEMON® Brand

Directions

In shallow dish, combine 1/4 cup ReaLemon® brand, oil and seasonings; add scallops.
Cover; marinate in refrigerator 2 hours, stirring occasionally.
Remove scallops from marinade; discard marinade.
Divide scallops and vegetables equally among 8 skewers.
Grill or broil as desired, until scallops are opaque, basting frequently with additional ReaLemon® brand.
Refrigerate leftovers.
