Scallop Bisque Recipe
Ingredients
| Scallops | 1 pound | |
| Onion | 1 Tablespoon, finley chopped | |
| 3 tablespoons butter or other fat | ||
| All purpose flour | 2 Tablespoon | |
| Milk | 2 Cup (16 tbs) | |
| Salt | 1/2 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| Spice bag with 6 peppercorns, | ||
| 1 whole garlic clove, and 1 bay leaf | ||
Directions
Rinse scallops to remove any grit and chop into 1/2 inch pieces.
Cook onion in butter until tender.
Blend in flour and gradually add milk.
Cook and stir over low heat until slightly thickened.
Add salt, pepper, spice bag, and scallops.
Cook gently for 10 minutes.
Remove spice bag and serve.
Makes 4 servings.
