Scallop And Mushroom Pie Recipe
Ingredients
| Scallops | 8 | |
| Milk | 1/2 Pint | |
| 4 tablesp. sweet sherry | ||
| 1 heaped tablesp. Butter | ||
| Mashed potato | 1 Pound | |
| Mushrooms | 1/4 Pound | |
| 1 heaped tablesp. Flour | ||
| 1 tablesp. chopped parsley | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
simmer in the milk with salt and pepper to taste for 15 minutes.
Strain, but reserve the milk.
Melt the butter in a saucepan, add the flour and mix well, then gradually stir in the warmed milk, seeing that it is free from lumps.
Add the mushrooms cut into pieces, the sherry and the scallops.
Put into an oven-proof dish and cover the top with mashed potatoes.
Dot with butter and bake in a moderate oven (350° F. electric; gas regulo 4) until the top is gently browned, about 20-30 minutes.
Garnish with parsley.
Soft roes can be added to the scallops if they are available.
