Scallion Oil Dressing Recipe
|Large scallions||10 Ounce, greens trimmed and reserved and white part cut into 1 inch (11 Large Pieces, 280 Gram)|
|Vegetable oil||5 Tablespoon|
|Oriental sesame oil||2 Tablespoon|
|Fresh ginger||1⁄4 Inch, peeled|
|Rice wine||1 Tablespoon|
|Clean rice vinegar||1 Tablespoon|
|Light salt soy sauce||1 Teaspoon (Or Reduced Salt)|
|Freshly ground white pepper||1⁄4 Teaspoon|

Chop finely the white part of the scallions with the metal blade of a food processor, about 5 seconds.
Heat the oils in a heavy saucepan over medium-high heat until smoking, about 4 minutes.
Carefully add the chopped scallion, cover the pan, and remove it from the heat.
Cool for 1 hour.
Strain and discard the scallion.
Drop the ginger through the feed tube with the motor running and chop finely, about 5 seconds.
Add the remaining ingredients except the scallion greens and with the motor running pour the scallion oil through the feed tube.
Stir in the scallion greens.
