Savory Wild Rice Manitoba Recipe
Ingredients
175 g (6 oz) (3/4 cup) wild rice
750 ml (1 1/4 pints) (3 cups) water
salt and pepper
50 g (2 oz) (1/4 cup) butter
2 onions, chopped
100 g (1/ 4 lb) (2/3 cup) seedless raisins
75 g (3 oz) (1/2 cup) flaked almonds
pinch cinnamon
Directions
1 Soak the wild rice overnight, 2 Bring the water to the boil in a saucepan, season and add the wild rice.
Boil gently for 40 minutes until tender.
3 Meanwhile,heat the butter in a frying pan (skillet) and shallow- fry the onions until golden.
Add the raisins, flaked almonds, cin- namon and season with salt and pepper.
4 Add the strained, cooked wild rice and heat through.
Serve with game.
Tip: Wild rice can be mixed with a variety of vegetables such as cooked peas, corn kernels, lentils and beans.
Try mixing in some chopped cooked meat or poultry.
