Savory Flapjacks Recipe
Ingredients
| Plain flour | 6 Ounce | |
| 2 rounded tablespoons fine semolina | ||
| 2 rounded teaspoons baking powder | ||
| Shake of pepper | ||
| Salt | 1 Pinch | |
| Egg milk | 1 | |
| Cheese | 1 Ounce, grated | |
| Cooked ham | 2 Ounce, chopped | |
| Fat | 1 Ounce | |
| Parsley | ||
Directions
Sieve dry ingredients.
Add unbeaten egg and mix well, add milk to make a thick batter.
Stir in grated cheese and chopped ham, mixing well.
Beat before using.
Melt a very small knob of fat in a thick frying pan, griddle or hot plate, and make smoking hot.
Drop on tablespoons of batter from the tip of spoon, making as many circles as the pan will take.
Cook over moderate heat until bubbles form and burst, by which time the underside of flapjacks will be golden brown.
Flip each flapjack over and cook the other side.
As made, slip the flapjacks into a clean teacloth, until all the mixture has been used up.
Serve with onion and tomato sauce, and garnish with sprigs of parsley.
