Savory Veal Loaf Recipe

Ingredients
2 pounds lean ground veal
1 cup rolled oats
1/2 cup finely chopped onion
2 tablespoons chopped parsley
2 teaspoons salt
1/2 teaspoon pepper
6 slices bacon
2 eggs,slightly beaten
1 cup tomato juice
1 tablespoon bottled thick meat sauce
2 teaspoons prepared mustard, Parsley sprigs, Lemon wedges or slices
Directions
Put veal and next 5 ingredients in mixing bowl.
Fry bacon until crisp; drain, crumble and add to mixture.
Mix lightly together.
Combine eggs, tomato juice, meat sauce and mustard; add to meat mixture, and pack into lightly greased 9" x 5" x 3" loaf pan.
Bake at 350°F.
about 1 1/2 hours.
Stand pan on wire rack in warm place 10 minutes; turn meat loaf out on warm serving platter, and garnish with parsley and lemon.
