Savory Roast Chicken Recipe
Ingredients
1 roasting chicken (about 4 pounds)
1/2 teaspoon salt
2 cups Savory Stuffing
1 to 2 tablespoons butter or margarine
Directions
Wash chicken and pat dry.
Sprinkle inside with salt.
Stuff neck and body cavities lightly with Savory Stuffing (bake any remaining stuffing in a casserole).
Skewer neck skin to body, secure body cavity closed, and tie legs to tailpiece.
Place chicken on rack in shallow roast ing pan; rub with butter or margarine.
Roast at 375° about 2 hours (figure time at 30 minutes per pound), or until drum stick moves easily at joint.
