Savory Eggplant Casserole Recipe

Ingredients
1 med. eggplant, cooked and mashed
1 egg, beaten
1 c. bread crumbs
1 tsp. sage
1 tsp. parsley flakes
7 tsp. oregano
1/2 tsp. pepper
1 tsp. salt
2 tbsp. chopped onion
1/2 c. grated cheese
Directions
Peel eggplant; dice.
Cook in boiling salted water until tender; drain and mash.
Combine eggplant, egg, bread crumbs, seasonings, onion and cheese.
Spoon eggplant mixture into 1 1/2-quart casserole.
Bake at 325 degrees for 25 to 30 minutes.
