Ingredients

 Onion1 Medium, chopped
 Butter/Margarine2 Tablespoon
 4 carrots, scraped and coarsely chopped
 Chicken broth4 Cup (16 tbs)
 1 (2- x 1-inch) strip lemon rind
 Teaspoon1 Tablespoon, minced
 Sugar2 Teaspoon
 Curry powder 1 Teaspoon
 Salt1/4 Teaspoon
 Pepper1/4 Teaspoon
 3 tablespoons dry sherry Thinly sliced carrot strips (optional)

Directions

Saute onion in butter in a large skillet until tender.
Add next 8 ingredients.
Cover, reduce heat, and simmer 20 minutes or until carrots are tender.
Pour half of mixture into container of electric blender; process until smooth.
Pour into a bowl or pitcher; repeat with remaining mixture.
Stir in sherry.
Cover and chill.
Garnish soup with carrot strips, if desired.
