Savory Carrot Soup Recipe

| Chicken broth | 4 Cup (16 tbs) | |
| 1 (2- x 1-inch) strip lemon rind | ||
| Teaspoon | 1 Tablespoon, minced | |
| Sugar | 2 Teaspoon | |
| Curry powder | 1 Teaspoon | |
| Salt | 1/4 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| 3 tablespoons dry sherry Thinly sliced carrot strips (optional) | ||
Directions
Saute onion in butter in a large skillet until tender.
Add next 8 ingredients.
Cover, reduce heat, and simmer 20 minutes or until carrots are tender.
Pour half of mixture into container of electric blender; process until smooth.
Pour into a bowl or pitcher; repeat with remaining mixture.
Stir in sherry.
Cover and chill.
Garnish soup with carrot strips, if desired.
