 Frozen chopped spinach package1
 Cream cheese1 , softened
 Shredded sharp Cheddar cheese1 Cup (16 tbs)
 5 eggs, slightly beaten
 Salt1/4 Teaspoon
 Green onion1/4 Cup (16 tbs), chopped
 Garlic1 Clove (5gm), minced
 Parsley2 Tablespoon, chopped
 1 (9 inch) pastry shell, unbaked
 1 thinly sliced tomato
 Parmesan cheese1/4 Cup (16 tbs), grated

Directions

Preheat oven to 450°.
Cook spinach according to package directions.
Drain well and squeeze to remove excess water.
Set aside.
Combine cream cheese, Cheddar cheese, eggs, salt, onion, garlic (optional), and parsley; beat lightly with a fork.
Stir in spinach and pour mixture into unbaked pastry shell.
Arrange tomato slices on top and sprinkle with Parmesan cheese.
Bake for 35 minutes or until set.
