Savory Rice Salad Recipe
Savory rice salad is a chicken and rice salad made with vegetables. Flavored with minced coriander leaves, the savory rice salad is tossed with peanut oil and a liberal dash of vinegar to taste.
Ingredients
1 cup long grain rice
2 medium size carrots, peeled and coarsely shredded
1 medium size cucumber, peeled, halved lengthwise, seeded, and sliced 1/4 inch thick
3 green onions, sliced thin
1 cup chopped cooked chicken
1 tablespoon Oriental sesame or peanut oil
1 tablespoon peanut oil
4 teaspoons rice vinegar or white wine vinegar
1/4 teaspoon sugar
2 tablespoons minced fresh coriander or parsley
Directions
In a medium size saucepan, cook the rice according to package directions, omitting the salt.
Transfer to a large bowl and add the carrots, cucumber, green onions, and chicken; toss well to mix.
In a small bowl, whisk together the sesame oil, peanut oil, vinegar, and sugar.
Pour over the rice mixture, sprinkle with the coriander, and toss well again.
