Savory Potato & Roasted Garlic Soup Recipe
Ingredients
| Bacon Slices | 2 | |
| 1 pound all-purpose or red-skinned potatoes, peeled and cubed | ||
| Onion | 1 Medium, diced | |
| Red bell pepper | 1 Small, diced | |
| 1 rib celery, chopped | ||
| Dried thyme leaves | 1/4 Teaspoon, crushed | |
| Ground black pepper | 1/8 Teaspoon | |
| Chicken broth | 1 Can (10oz) | |
| 1/4 cup dry white wine or additional chicken broth | ||
| 1 jar (16 ounces) Cheese Creations | ||
| Roasted Garlic Parmesan Sauce | ||
Directions
In 3-quart saucepan, cook bacon; remove and crumble. Reserve drippings. Add potatoes, onion, bell pepper, celery, thyme and black pepper to reserved drippings. Cook over medium heat, stirring occasionally, 6 minutes or until onion is tender. Stir in chicken broth and wine. Bring to a boil over high heat. Reduce heat to low and simmer covered 10 minutes or until vegetables are tender. Stir in Cheese Creations Sauce; heat through. Garnish with bacon.
