Savory Microwave Chicken Recipe
Ingredients
| 6 boneless chicken breast fillets skinned, all visible fat removed | ||
| 2 cups homemade Chicken Broth or commercial low-sodium variety | ||
| 3 tablespoons acceptable margarine | ||
| Onion | 1 Cup (16 tbs), finley chopped | |
| Carrots | 1 Cup (16 tbs), sliced | |
| 2 cups small broccoli florets | ||
| 1 cup homemade Chicken Broth or commercial low-sodium variety | ||
| Sherry | 2 Tablespoon | |
| Cornstarch | 2 Tablespoon | |
| Orange juice | 1 Cup (16 tbs) | |
| Light soy sauce | 1 Tablespoon | |
| Garlic powder | 1/2 Teaspoon | |
| Orange rind | 1 Teaspoon, grated | |
| Salt | 1/4 Teaspoon | |
| Slivered almonds | 1/3 Cup (16 tbs) | |
Directions
Rinse chicken and pat dry.
Cut into 1-inch cubes.
Set aside.
Place 2 cups chicken broth and chicken in microwave-safe casserole, cover and cook 5 minutes on medium.
Stir and cook another 5 minutes.
Drain chicken and discard broth.
Transfer chicken to a plate and set aside.
In the same casserole dish, melt margarine on high for 20 seconds.
Add vegetables, cover and cook on high 7 minutes.
Remove from microwave and add chicken pieces.
Set aside.
In a microwave-safe bowl, combine 1 cup of broth and remaining ingredients, except almonds.
Cook on high for 5 minutes.
Add to chicken and vegetable mixture in casserole.
Stir to mix well.
Cover and heat on medium for 3 minutes, or until all ingredients are evenly heated.
Top with almonds and serve.
