Ingredients

 
1 tablespoon olive oil
 
1 tablespoon minced garlic
 
4 cups water
 
4 medium russet potatoes, peeled and cut into quarters
 
1 cup DANNONĀ® Plain Nonfat or Low fat Yogurt
 
1/4 cup milk
 
1/4 cup sliced scallions or green onions
 
1 teaspoon salt
 
1/4 teaspoon freshly ground pepper

Directions

In a large heavy saucepan or Dutch oven heat oil over medium-low heat.
Add garlic; cook and stir 1 minute, stirring constantly, until fragrant but not browned.
Add water and potatoes.
Cover and bring to a boil over high heat.
Reduce heat to medium-low and simmer 15 to 20 minutes or until potatoes are very tender.
Drain well.
Return potatoes to saucepan and mash.
Add yogurt and milk and stir until creamy.
Stir in scallions, salt and pepper.
