Ingredients
2 cups all-purpose flour
Salt
3/4 cup shortening
5 to 6 tablespoons ice water
1 8-ounce package cream cheese, softened
10 eggs
3 1/2 cups milk
1/4 cup grated Parmesan cheese
1/4 cup chopped parsley
2 tablespoons fresh or freeze-dried chopped chives
1/2 teaspoon oregano leaves
1/4 teaspoon pepper
1/2 pound Monterey Jack cheese, shredded
Directions
1. Prepare pastry: In medium-sized bowl, stir flour and 1 teaspoon salt. With pastry blender or 2 knives used scissors fashion, cut shortening into flour to resemble coarse crumbs. Sprinkle water, 1 tablespoon at a time, into mixture, mixing lightly with fork after each addition, until pastry is just moist enough to hold together. Shape pastry into ball.
2. On lightly floured surface, with floured rolling pin, roll pastry ball into a rectangle about 19" by 15"; use to line 13" by 9" baking pan. Trim pastry edge, leaving 1-inch overhang. Fold overhang under; with fork, firmly press edge onto baking pan rim.
3. Prepare filling: In large bowl, with mixer at low speed, beat cream cheese until smooth. Add eggs, next 6 ingredients, and 1 1/4 tea spoons salt; continue beating until well mixed, occasionally scraping bowl with rubber spatula.
4. Preheat oven to 375°F. Sprinkle Monterey Jack cheese evenly over pastry in baking pan; pour egg mixture over cheese. Bake 1 hour or until knife inserted in center of custard comes out clean.
