Savory Black Eyed Peas Recipe
Ingredients
| 2 c. dried black-eyed peas | ||
| Cold water | 4 Cup (16 tbs) | |
| Salt | 2 Teaspoon | |
| Pepper | 1/2 Teaspoon | |
| 2 oz. sliced fat salt pork | ||
| 4 peeled, small white onions | ||
Directions
Soak the peas in the cold water overnight.
In the morning, drain off the water; add to it enough more water to make 4 c liquid.
Add to the black-eyed peas with the salt, pepper, salt pork, and onions.
Then cover; bring to a boil, and let simmer for about 1 hr 10 min., or until peas are tender, adding more boiling water if necessary.
