Savory Bean Stew Recipe
Ingredients
1 cup dry Stone-Buhr soybeans
1 qt. water
1/3 cup onion, chopped
1 tsp margarine
1/2 lb. ground beef
4 tomatoes, cored but not peeled
Salt and pepper to taste
Directions
Wash beans and combine with the water in a soup pot.
Boil for 2 minutes.
Cover and let stand for 1 hour.
Simmer 1 to 1 1/2 hours or until almost tender, adding water if necessary.
In a casserole or pan, brown onion in margarine.
Add beef, stir and cook slowly for a few minutes.
Cut tomatoes into small pieces.
Combine all the ingredients.
Simmer until meat is tender and the flavors are blended, about 45 to 50 minutes.
Season with salt and pepper.
