Ingredients

 1 pound dried pea bea and drained ns washed
 Water6 Cup (16 tbs)
 Bay Leaf1
 Garlic2 Clove (5gm)
 Salt2 Teaspoon
 Pimientos1 Can (10oz), drained
  and chopped
 1 large green pepper, mi need
 1 bunch green onions, m need
 1/2 cup cooking or olive oil
 Garlic1 Clove (5gm), mashed
 Wine vinegar1/4 Cup (16 tbs)
 Frankfurters1 pound
 Parsley1/4 Cup (16 tbs), minced
 Salt To Taste
 Pepper To Taste

Directions

Cover beans with water.
Bring to boil and boil for 2 minutes.
Cover and let stand for 1 hour.
Add bay leaf, garlic cloves, and salt; simmer until tender; drain.
Combine pimientos, green pepper; onions, oil, mashed garlic, and vinegar and mix with drained beans.
Season to taste with salt and pepper.
Put in 2 1/2-quart casserole.
Top with frankfurters and bake, covered, in preheated hot oven (400°F.) for about 15 minutes.
Sprinkle with minced parsley.
Makes 8 servings.
