Savory Apple Topped Turkey Medallions Recipe

Whenever I crave for a Turkey dish,  I prefer  making the simple Savory Apple Topped Turkey Medallions. It is not only easy to make, but Savory Apple Topped Turkey Medallions always helps to keep the hunger pangs in check. So next time you have a desire, check out this one. 

Ingredients

 
1 pound Turkey Tenderloins, cut into 3/4 inch medallions
 
Salt and pepper (optional)
 
1 teaspoon olive oil
 
1 teaspoon margarine
 
1 large clove garlic, crushed
 
2/3 cup peeled, diced apples
 
1/3 cup orange juice
 
3 tablespoons jellied cranberry sauce
 
4 teaspoons orange marmalade

Directions

Lighdy sprinkle one side of each medallion with salt and pepper, if desired.
In large nonstick skillet over medium-high heat, heat oil and margarine.
Add medallions and garlic; cook turkey approximately 1 1/2 minutes per side, turning each medallion over when edges have turned from pink to white.
Stir garlic occasionally and continue cooking until medallions are no longer pink in centers and register 170°F on meat thermometer.
Remove from skillet.
In same skillet over medium heat, combine apples, orange juice, cranberry sauce and marmalade.
Cook and stir until sauce is hot and apples are tender but hold their shape.
Spoon sauce over medallions.
