Sauterne Swiss Fondue Recipe
Ingredients
| Swiss Cheese | 4 Cup (16 tbs), shredded | |
| Flour | 2 Tablespoon | |
| Garlic | 1 Clove (5gm), halved | |
| 1 1/2 cups dry sauterne or dry white wine | ||
| Pepper | 1 Dash | |
| Dash of nutmeg | ||
| 3 tablespoons dry sherry French bread cut into 1-inch pieces with crust | ||
Directions
Toss together the cheese and flour.
Rub the inside of the fondue pot with garlic.
Add sauterne or dry white wine and warm until bubbles begin to rise.
Add the cheese mixture, a handful at a time.
When the cheese mixture is well blended, bring to a boil.
Watch very carefully.
Add seasonings including sherry.
Transfer fondue pot from stove to fondue stand.
Spear the cubes of bread on long-handled fondue forks and dip in fondue.
Ham cubes or pre-cooked seasoned sausage is also good.
This makes a wonderful summer dish with a platter of fresh fruit, cold apple wedges, cold pears, grapes, cantaloupe and honey-dew melon and a green salad.
