Ingredients

 Firm-ripe medium mango - 1, peeled, pitted, and finely chopped (about 2 cups)
 Red onion - 1/2 small, chopped fine, soaked in cold water for 20 minutes, and drained
 Jalapeno1 , minced (FOR THE SALSA:)
 Lime juice3 Tablespoon (FOR THE SALSA:)
 Fresh coriander or basil - 2 tablespoons chopped
 Vegetable oil4 Teaspoon (FOR THE FISH:)
 Red snapper fillets - 4 six-ounce, skinned
 Lemon Juice1 Tablespoon (FOR THE FISH:)
 Salt To Taste
 Pepper To Taste

Directions

MAKING
1) In a bowl mix all the salsa ingredients.
2) Chill the mixture for 30 minutes till 1 hour.
3) In a large nonstick skillet, heat the oil over moderate high heat till hot.
4) Add fish and sauté for 3 to 4 minutes till cooked through.
5) Sprinkle lemon juice on top.
6) Add salt and pepper to taste.

SERVING
7) Top each portion with some of the salsa.
