| Firm-ripe medium mango - 1, peeled, pitted, and finely chopped (about 2 cups) | ||
| Red onion - 1/2 small, chopped fine, soaked in cold water for 20 minutes, and drained | ||
| Jalapeno | 1 , minced (FOR THE SALSA:) | |
| Lime juice | 3 Tablespoon (FOR THE SALSA:) | |
| Fresh coriander or basil - 2 tablespoons chopped | ||
| Vegetable oil | 4 Teaspoon (FOR THE FISH:) | |
| Red snapper fillets - 4 six-ounce, skinned | ||
| Lemon Juice | 1 Tablespoon (FOR THE FISH:) | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
MAKING
1) In a bowl mix all the salsa ingredients.
2) Chill the mixture for 30 minutes till 1 hour.
3) In a large nonstick skillet, heat the oil over moderate high heat till hot.
4) Add fish and sauté for 3 to 4 minutes till cooked through.
5) Sprinkle lemon juice on top.
6) Add salt and pepper to taste.
SERVING
7) Top each portion with some of the salsa.
