Sauteed Leeks Recipe
Ingredients
| Leeks | 2 Pound | |
| 2 Ige. onions, chopped | ||
| Olive oil | 1/2 Cup (16 tbs) | |
| Carrots | 3 Medium, sliced | |
| 1 Ige. fresh tomato, diced | ||
| Salt | 1 Teaspoon | |
| Pepper white | 1/4 Teaspoon | |
Directions
Wash leeks thoroughly; discard dark green tops.
Slice leeks into 2-inch sections.
Soak in cold water; drain.
Saute chopped onions in olive oil in saucepan for 15 minutes or until transparent; add carrots, tomato, leeks, salt and pepper.
Add enough boiling water to just cover vegetables.
Steam, covered, for 1 hour or until leeks are tender.
Slice leeks into 2-inch sections.
