Directions
1 In a pan, drizzle some olive oil.
2 Put the cod fillet on the pan and cook on medium heat.
3 Meanwhile, cut the cherry tomatoes in half.
4 Cut the olives in halves as well.
5 In a bowl combine the cherry tomatoes and olives and sprinkle with salt and pepper.
6 Tear the basil leaves roughly and add to the tomatoes and olives.
7 Add a dash of red wine vinegar to the salad and sprinkle some olive oil as well.
8 Mix the salad well for all the flavors to blend.
9 Check the fish in the pan and flip it over to cook the other side.
10 Sprinkle the fish with salt and pepper.
11 Transfer the fish to a serving plate and arrange the salad on one side.
SERVING
12 Serve at once.
