Sauteed Calves Liver Lebanese Style Recipe

Ingredients
1 tablespoon minced garlic (3 large cloves)
1 teaspoon salt
1/4 cup olive oil
1 teaspoon dried mint leaves, crumbled
Freshly ground black pepper
8-10 ounces calves liver, sliced 1/2 inch thick
2 tablespoons fresh lemon juice
Directions
Combine the garlic and salt together in a medium size bowl, mashing the garlic with the back of a spoon.
Stir in the olive oil, mint leaves, and plenty of pepper.
Cut the liver into 1 x 2 inch pieces and add it to the bowl with the garlic mixture, stirring to cover.
Let the liver marinate for 30 minutes.
Heat a large, heavy skillet over medium-high heat.
Add the liver and garlic mixture, stir, and turn the pieces just until the liver is cooked through, about a minute and a half.
Remove the pan from the heat, stir in the lemon juice
