Sauteed Bitter Gourd Recipe

sauteed bitter gourd is a slightly bitter cooked preparation of sliced bitter gourd that is paired well with rice. Tossed with ghee, cumin, yogurt and spice mix, the sauteed bitter gourd is best served hot with a garnish of chooped coriander.

Ingredients

 
1 medium bitter gourd, trimmed, cut into half, deseeded and sliced thinly
 
1 tsp spice mix (equal quantities of cloves, cinnamon and green cardamom)
 
1-2 tbsp ghee
 
1 tsp whole cumin seeds
 
1 tbsp fresh yoghurt rock
 
Salt to taste
 
1 tbsp fresh coriander, chopped

Directions

Blanch the bitter gourd slices in boiling salted water for 3-4 minutes.
Drain.
In a large pan or wok, heat the ghee till it is clear.
Toss in the cumin seeds and stir briefly, being careful not to burn the seeds.
Add the bitter gourd, yoghurt, spice mix and salt, mix well and saute for about 5 minutes, till the gourd is tender.
Remove from heat, garnish with the coriander and serve hot with flatbreads or a grain of your choice.

This is the nastiest recipee I have ever made. Nothing makes the gourd less bitter. I generally love Indian food, so am very dissapointed. Guess I don't like bitter gourd. Did I say this is nasty???!!!
