Ingredients

 1 pound beef kidneys
 Cornstarch1 1/2 Tablespoon
 Water1 1/2 Tablespoon
 Sherry2 1/2 Tablespoon
 1 onion, chopped fine
 Soy sauce2 Tablespoon
 Salt1/2 Teaspoon
 Oil2 Tablespoon

Directions

Cut the kidneys in half and carefully cut away and discard the membranes, white veins and the core.
Soak the kidneys in cold water for 1/2 hour and wash thoroughly.
Slice them as thin as possible.
Blend the cornstarch with the water and add sherry, soy sauce, salt and onion.
Marinate the kidneys in this mixture for 15 minutes.
Heat a pan with the oil and when it is boiling hot add the kidneys and saute for 2 or 3 minutes, stirring constantly.
The kidneys should be cooked as quickly as possible and should be crisp and not chewy.
Serve very hot.
