 Veal brain4
 Lemons2 , juiced
 Salt1 Teaspoon
 Butter1⁄2 Cup (8 tbs)
 Chopped fresh dill2 Tablespoon
 Lemon1 , cut into wedges
 Flour1⁄2 Cup (8 tbs), seasoned with salt and pepper
 Salt To Taste (For Seasoning The Flour)
 Pepper To Taste (For Seasoning The Flour)

Directions

1. Rinse brains thoroughly. Soak in water with ice cubes for 15 minutes. Drain; remove membranes.
2. Pour enough water into a saucepot to cover brains. Add lemon juice and salt; bring to boiling. Reduce heat and drop in brains. Simmer 15 minutes. Drain. Plunge into ice water to cool quickly.
3. Dip brains into seasoned flour.
4. Put butter into a skillet and heat until deep brown. Add brains and saute briefly. Remove to a warm platter. Sprinkle with dill.
