1 pound (455 g) thinly sliced turkey breast
2 teaspoons finely chopped fresh sage or 1 teaspoon dried sage
2 teaspoons olive oil
1/2 cup (55 g) finely shredded provolone or part-sikim mozzarella cheese

Directions
1. Rinse turkey and pat dry. Sprinkle one side of each slice with chopped sage; set aside.
2. Heat 1 teaspoon of the oil in a wide nonstick frying pan over medium-high heat. Add half the turkey, sage-coated side down, and cook until golden on bottom (about 1 1/2 minutes). Then turn pieces over and continue to cook until no longer pink in center; cut to test (30 to 60 more seconds). Transfer cooked turkey to a platter and sprinkle with half the cheese. Cover loosely with foil and keep warm.
3. Repeat to cook remaining turkey; using remaining 1 teaspoon oil; add water, 1 tablespoon (15 ml) at a time, if pan appears dry. Transfer turkey to platter; sprinkle with remaining cheese.
