Sauteed Turkey Cutlets With Mushroom Sauce Recipe

Ingredients
1 1/4 pounds turkey cutlets
1/4 teaspoon salt
1/4 teaspoon coarsely ground black pepper
4 teaspoons olive oil
1 garlic clove, crushed with garlic press
1 pound mushrooms, sliced
1/4 teaspoon dried thyme leaves
1 cup chicken broth
1 teaspoon cornstarch
Directions
Sprinkle turkey cutlets with salt and pepper.
In nonstick 12 inch skillet, heat 2 teaspoons of olive oil over medium high heat until hot.
Add turkey cutlets and cook 3 to 5 minutes, turning cutlets once, until lightly browned on the outside and they just lose their pink color on the inside.
Transfer cutlets to warm platter; cover and keep warm.
In same skillet, heat remaining 2 teaspoons olive oil over medium heat until hot.
Add garlic and cook 10 seconds.
Add mushrooms and thyme and cook 10 minutes longer or until mushrooms are golden and liquid evaporates.
In cup, mix chicken broth and cornstarch until smooth.
Add chicken broth mixture to skillet and heat to boiling.
Cook 2 minutes.
Spoon sauce over cutlets.
