Sauteed Sweetbreads Recipe
Ingredients
4 pairs sweetbreads from milk-fed calves
Ice water
2 teaspoons salt
1 teaspoon lemon juice
5 tablespoons butter or olive oil for frying
Flour seasoned with salt and pepper
Directions
1. Soak sweetbreads in ice water mixed with salt for 1 hour. Drain.
2. Place sweetbreads in boiling water to cover. Add lemon juice and simmer 10 minutes. Drain. Plunge at once into ice water. Remove membranes and connective tissue, and split into 2 pieces.
3. Melt butter or heat olive oil in a skillet. Dip sweetbreads into flour. Fry until golden brown on all sides.
