1 tbsp (15 ml) vegetable oil
 
1 tbsp (15 ml) butter
 
4 potatoes, cooked "al dente," sliced
 
1/4 cup (60 ml) onion, finely sliced
 
Salt and pepper
 
1 tbsp (15 ml) parsley
 
1 tsp (5 ml) garlic, finely sliced

Directions

–  In a skillet, over high heat, heat oil and melt butter.
–  Add potatoes and onions and cook until slightly browned. Stir gently, season with salt and pepper and sprinkle with chopped parsley. Add garlic, then remove from heat.
