Sauteed Potatoes Recipe

Ingredients

 
2 cups potatoes, diced
 
2 tbsp peanut oil
 
1 tbsp butter
 
1/2 cup cooked bacon, crumbled
 
1 garlic clove, chopped
 
1/2 tsp rosemary, chopped
 
1 tsp parsley, chopped
 
Salt and pepper

Directions

In a saucepan filled with lightly salted boiling water, blanch potatoes 3 minutes or so.
Drain.
Pat dry.
In a large frying pan, heat oil until smoky.
Saute potatoes, stirring often so they turn a slight golden color all over.
Mix in remaining ingredients.
While stirring, continue cooking until potatoes are nicely browned.
