2 tbs (30 ml) butter or margarine
2 tbs (30 ml) cooking oil
2 cups (480 ml) sweet potatoes or yams, cooked and sliced
2 Plantains, peeled and chopped
1/2 cup (120 ml) chopped green onion
1/2 cup (120 ml) cooked ham, chopped, optional
1 clove garlic, minced
1/2 cup (120 ml) chicken or beef broth
2 tbs (30 ml) butter or margarine
1-2 tbs (15-30 ml) choppedFresh Thyme, Chervil, Dill or Savory salt, to taste pepper, to taste
How to make Sauteed Plantains & Sweet Potatoes
In a large skillet, melt 2 tbs butter and cooking oil until hot.Add potatoes, plantains, onions, ham, if desired, and garlic.
Cook, stirring frequently, about 5 minutes.
Add broth; cover and simmer 10 minutes or until plantains are tender.
Add remaining butter and desired fresh herbs; season to taste with salt and pepper.
