Sauteed Peppers And Tomatoes Recipe
Sauteed peppers and tomatoes is a mixed vegetable recipe. Cooked with added onions with garlic and vinegar for flavor, the vegetables are lightly sauteed to serve. A light and flavorful side to meals.
Ingredients
1 tablespoon olive oil
3 medium size sweet red or green peppers, cored, seeded, and cut into 1 inch squares
1 large yellow onion, cut into 1 inch cubes
2 medium size ripe tomatoes, peeled, cored, seeded, and chopped
2 tablespoons cider vinegar
2 cloves garlic, minced
Directions
In a heavy 12 inch skillet, heat the olive oil over moderate heat for 1 minute; add the peppers and onion, cover, and cook for 10 minutes.
Stir in the tomatoes, vinegar, and garlic and cook, covered, 10 minutes longer.
