Directions

Wash and peel the cucumbers.
Cut them into halves lengthwise and scrape out the seeds with a spoon.
Split each half lengthwise and cut into 1-inch pieces.
Dry the pieces with a clean kitchen towel.
In a paper bag, mix together the flour, salt and pepper.
Add the cucumbers.
Shake to coat the pieces and shake off excess flour.
Heat the butter in a deep frying pan and cook the onion for about 1 minute.
Add the cucumbers.
Cook over medium-to-high heat, stirring constantly with a fork, for 4 or 5 minutes or until crisp and golden.
Do not overcook or the cucumbers will be soggy.
Drain on paper towels.
