Ingredients

 Onions1/2 pound, sliced
 Green Pepper - 6 ounces, cut into 6 inch strips
 Carrots6 Ounce, sliced
 Mushrooms6 Ounce, sliced
 Tomatoes3/4 pound, quartered
 Sunflower Seed Oil - 2 1/2 tablespoons
 Salt To Taste
 Ground pepper1 To taste

Directions

MAKING
1) Into a saucepan, heat some oil
2) Add the onions and sauté them till soft
3) Then add the carrots and sauté for a couple of minutes
4) Tip in the mushroom, pepper and tomatoes
5) Add salt to taste and then cover with a lid
6) Cook over a low flame allowing vegetables to cook in the steam which should take about 20-25 minutes

SERVING
7) Serve the vegetables over some brown rice
8) The vegetables can be paired according to season and availability
