Sausages with Mustard Mash Recipe
Ingredients
| 8 speciality sausages | ||
| 2 onions, cut into wedges, roots left intact | ||
| Potatoes | 1 Kilogram, quartered (MUSTARD MASH:) | |
| Butter | 75 Gram (MUSTARD MASH:) | |
| 1 tablespoon wholegrain mustard | ||
| English mustard | 3 Teaspoon (MUSTARD MASH:) | |
| Garlic | 1 Clove (5gm), crushed (MUSTARD MASH:) | |
| 1 large bunch of parsley, chopped | ||
| Dash of olive oil | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Place the potatoes in a saucepan of cold water, bring to the boil and simmer for 15 minutes.
Heat a griddle pan until hot.
Place the sausages on the griddle and cook for 10 minutes, turning to get an even colour.
Add the onion wedges and cook for 6-7 minutes with the sausages.
When the potatoes are cooked, drain well and return to the pan, place over a low heat and allow any excess water to evaporate but take care that the potatoes do not colour.
Remove from the heat and peel.
Mash them thoroughly, add the butter, mustards and garlic and season to taste.
Taste the potato and add more mustard if liked.
Finally, add the parsley and a dash of olive oil and stir.
Serve the mash and sausages together with the griddled onion wedges.
