Sausage Ragout Recipe
|Sweet italian sausage||1 1⁄2 Pound|
|Hot italian sausage||1 1⁄2 Pound|
|Olive oil||1⁄4 Cup (4 tbs) (Best Quality)|
|Yellow onion||1 Large, peeled and coarsely chopped|
|Garlic||3 Clove (15 gm), peeled and minced|
|Green peppers||2 , stemmed, seeded and coarsely chopped|
|Sweet red peppers||2 , stemmed, seeded and coarsely chopped|
|Italian plum tomatoes||8 , quartered (Fresh)|
|Spicy tomato sauce||1 Cup (16 tbs)|
|Dry red wine||1⁄2 Cup (8 tbs)|
|Minced flat leaf italian parsley||1⁄2 Cup (8 tbs)|
|Freshly ground black pepper||To Taste|

Heat olive oil in a skillet and add sausage pieces.
Cook, stirring occasionally, until sausage pieces are well browned.
Add onion and garlic and cook for another 5 minutes.
With a slotted spoon transfer meat mixture to a deep casserole.
Set casserole over medium heat and add the peppers.
Cook, stirring, until peppers are slightly wilted, about 7 minutes.
Add tomatoes, spicy tomato sauce, wine and parsley, and season with salt and pepper to taste.
Simmer uncovered, stirring occasionally, for 30 minutes.
Taste, correct seasoning, and serve immediately, sprinkled with chopped parsley.
