Ingredients

 1 1/2 pounds sweet Italian sausage
 Hot italian sausage1 1/2 Pound
 1/4 cup best-quality olive oil
 1 large yellow onion, peeled and coarsely chopped
 Garlic3 Clove (5gm), peeled
 2 green peppers, stemmed, seeded and coarsely chopped
 2 sweet red peppers, stemmed, seeded and coarsely chopped
 Italian tomatoes8 , quartered
 1 cup Spicy Tomato Sauce
 Dry red wine1/2 Cup (16 tbs)
 1/2 cup minced Italian parsley, plus additional for garnish
 Ground black pepper1 To taste
 Salt To Taste

Directions

Cut sausages into 1/2 inch slices.
Heat olive oil in a skillet and add sausage pieces.
Cook, stirring occasionally, until sausage pieces are well browned.
Add onion and garlic and cook for another 5 minutes.
With a slotted spoon transfer meat mixture to a deep casserole.
Set casserole over medium heat and add the peppers.
Cook, stirring, until peppers are slightly wilted, about 7 minutes.
Add tomatoes, spicy tomato sauce, wine and parsley, and season with salt and pepper to taste.
Simmer uncovered, stirring occasionally, for 30 minutes.
Taste, correct seasoning, and serve immediately, sprinkled with chopped parsley.
