Sausage N Beans Recipe
Ingredients
1 tablespoon vegetable oil
1 medium-size yellow onion, thinly sliced
1 pound kielbasa, frankfurters, orknockwurst, sliced 1/4 inch thick
2 cans (X pound each) barbecued baked beans, drained
3/4 cup water
2 tablespoons tomato paste
2 tablespoons Dijon mustard or to taste
1/2 teaspoon dried thyme, crumbled
1/4 teaspoon each salt and black pepper
2 medium-size yellow squash (or 1 zucchini andlyellow squash), halved lengthwise and sliced 1/2 inch thick
Directions
Heat the oil in a large saucepan over moderate heat for 1 minute.
Add the onion and kielbasa, cover, and cook, stirring occasionally, for 5 minutes.
Add the beans, water, tomato paste, mustard, thyme, salt, and pepper.
Bring the mixture to a boil, cover, adjust the heat so that the mixture bubbles gendy, and simmer, stirring occasionally, for 8 minutes.
Add the squash, cover, and simmer 5 to 7 minutes more or until it is tender.
