Sausage Jambalaya Recipe

Ingredients
6 oz. Patna rice
1 large onion
Seasoning
2-3 oz. butter or margarine for frying
1 lb. chipolata sausages
1 clove of garlic
8 oz. or can tomatoes
Pinch cayenne pepper
1 finely chopped red or green pepper when in season
Directions
Fry the sausages in a pan, then lift out and fry the finely chopped onion and garlic.
Add the tomatoes and pepper, simmer until soft.
Put the rice into a pan of boiling salted water and cook until just tender.
Strain, add to the onion mixture.
Season well, add the sausages, and if using fresh tomatoes stir in a little stock to keep the mixture moist.
