Ingredients

 1 pound sweet Italian sausage, with the casing removed
 2 medium-size all-purpose potatoes, peeled and thinly sliced
 1 medium-size yellow onion, peeled and thinly sliced
 Carrot1 Large, thinly sliced
 Dried basil1 Teaspoon, crumbled
 Chopped tomatoes3 , peeled
 Salt1 Teaspoon
 Black pepper1/8 Teaspoon

Directions

1. Preheat the oven to 400°F. Place the sausage in a heavy 9- or 10-inch skillet over moderate heat, and cook, uncovered, stirring frequently, until browned—about 5 minutes. Pour off
and discard the drippings from the skillet.
2. Layer an ungreased 2-quart casserole with the sausage, potatoes, onion, and carrot. Repeat the layers. Add the basil, tomatoes, salt, and pepper, and bake, covered, for 45 minutes.
