Sausage Antipasto Platter Recipe
Ingredients
| Pesto Spread | ||
| Tomato | 1 Large | |
| Genoa salami | 6 Ounce, thinly sliced | |
| 6 ounces thinly sliced ham cappicola | ||
| 6 ounces thinly sliced pepperoni | ||
| 1 loaf (8 ounces) French bread, cut into 1/4 inch slices | ||
| 1 pound unpared cooked new potatoes, cut into 1/4-inch slices | ||
| 4 ounces pea pods, trimmed, strings removed | ||
| Red bell pepper | 1 To taste, cut into strips | |
| 1 small zucchini, cut diagonally into 1/4-inch slices | ||
| Mushrooms | 4 Ounce, sliced | |
| Olives | 1/2 Cup (16 tbs) | |
Directions
Prepare Pesto Spread.
Cut 1/2-inch slice from top of tomato; zigzag edge.
Scoop out pulp.
Fill tomato with Pesto Spread; place in center of large serving platter.
Arrange remaining ingredients around tomato.
