Ingredients

 
2 pounds Italian Sausage
 
1 large yellow onion, peeled and chopped
 
1 package frozen spinach, defrosted, drained, and squeezed dry
 
Salt and pepper to taste
 
1/2 pound ricotta cheese
 
2 eggs
 
1/8 teaspoon nutmeg
 
1 cup dry white wine
 
2 tablespoons olive oil

Directions

Mix together all the ingredients, except the white wine and oil.
Form into meatballs, and brown in oil on both sides.
Add the white wine, cover the pan, and allow to simmer for 20 minutes.
You may need to add more wine so that the pan does not dry out.
