Saucy Scalloped Corn & Chops Recipe
Ingredients
1 tablespoon butter or margarine
1/4 cup chopped onion
2 tablespoons chopped green-bell pepper
1 (8 3/4 oz.) can cream-style corn
1 (8 3/4 oz.) can whole-kernel corn, drained
2 tablespoons chopped pimento
1/4 teaspoon dried leaf thyme, crushed
2 (5 oz.) fully cooked smoked pork chops, 1/2 inch thick
Directions
1. Place butter or margarine in a 10" x 6" baking dish. Microwave at 100% (high) 1 minute or until melted.
2. Stir in onion and green pepper. Cover and microwave at 100% (high) 3 minutes or until tender; stir after 1-1/2 minutes.
3. Stir in cream-style corn, whole-kernel corn, pimento and thyme. Cover with vented plastic wrap. Microwave at 100% (high) 3 minutes. Stir corn mixture.
4. Slash fat edges of pork chops. Place on top of corn mixture. Cover and microwave at 100% (high) 3 minutes. Give dish a half turn. Cover and microwave at 30% ( medium low ) 8 minutes or until heated through. Chops are done when they are hot in center.
