Ingredients

 Ground turkey1 pound
 Bread crumbs1/3 Cup (16 tbs)
 Egg1
 Garlic1 Clove (5gm), minced
 Grated ginger1 Teaspoon
 Red pepper flakes 1 Teaspoon, divided
 Light soy sauce2 Tablespoon, divided
 Vegetable oil1 Tablespoon
 Pineapple chunks1 Can (10oz), undrained
 Cornstarch1 Tablespoon
 2 tablespoons lemon juice or orange juice
 Honey2 Tablespoon
 1 large red bell pepper, seeded and cut into 1-inch triangles
 Hot cooked rice

Directions

1. Combine turkey, bread crumbs, egg, garlic, ginger, 1/2 teaspoon red pepper flakes and 1 tablespoon soy sauce in large bowl. Shape turkey mixture into 1-inch meatballs.
2. Heat oil in wok or large skillet over medium-high heat. Add meatballs and cook 4 to 5 minutes or until no longer pink in centers, turning to brown all sides. Remove from wok.
3. Drain pineapple, reserving juice. Add enough water to juice to make 1 cup liquid.Whisk together pineapple juice mixture, cornstarch, lemon juice, honey, remaining 1 tablespoon soy sauce and 1/4 teaspoon red pepper flakes. Pour into wok. Cook and stir until sauce thickens.
4. Add meatballs, pineapple and bell pepper to sauce. Cook and stir until hot. Adjust seasoning with remaining 1/4 teaspoon red pepper flakes, if desired. Serve over rice.
